An exquisite recipe from Hong Kong made with De Prado EVOO: Chop Suey



Chop Suey is a traditional Chinese recipe. These are very popular dishes and that is why they are so easy to prepare and also very tasty. The key is a soybean sprout sauté with soy sauce and meat. In this recipe we prepare a Chicken Chop Suey.

Ingredients for 4

4 tablespoons soy sauce, 2 teaspoons caster sugar, 500 gr chicken breast boned and skinned, 3 tablespoons olive oil, 2 shallots or spring onions, 2 garlic cloves, 200 gr soybean sprouts, 3 teaspoons sesame oil, 1 tablespoon cornstarch, 3 tablespoons water, 425 ml chicken stock, and leek sprouts or tender leek to garnish and, of course, De Prado EVOO.


Start by mixing the soy sauce with sugar stirring until completely dissolved

Clean the chicken breasts, bone them and remove the skin and any fat they may have. Slice them thinly and put them to marinate in the soy sauce and sugar mix. Place it in the fridge and leave it to marinate for some 20 minutes.

In a frying pan sauté the chicken slices in the olive oil for 2 or 3 minutes, until golden.

Next add the shallots cut in four and the garlic cloves crushed with a knife. Finally add the soybean sprouts and let it fry for about 4 minutes. In the end add the sesame oil.

In a pot boil the chicken stock and add the cornstarch dissolved in the water. Stir and let it boil until the chicken broth is thick.

Finish it by serving the sautéed chicken and vegetables in a tray over which you will pour the chicken stock and garnish with the leek cut in slices.
